- 1/4 CUP FRESH LIME JUICE
- 1 TSP. SALT
- 1 TSP. SUGAR
- 2 TSP. CORIANDER, GROUND
- 2 TSP. CUMIN, GROUND
GRILLED AVOCADOS
- 2 EA. AVOCADOS
- 1/2 TBSP. CANOLA OIL
- 1 TSP. SALT
- 1 TSP. BLACK PEPPER
ASSEMBLY:
- 4 EA. GRILLED AVOCADOS
- 1 CUP PERUVIAN TOFU
- 4 EA. CILANTRO LEAVES, PICKED, WASHED

Preparation
PERUVIAN TOFU
- IN A MIXING BOWL COMBINE TOFU, RED ONION, CILANTRO, GARLIC, LIME JUICE, SALT, SUGAR, GROUND CORIANDER AND GROUND CUMIN.
- THOROUGHLY MIX INGREDIENTS TOGETHER AND RESERVE FOR ASSEMBLY.
GRILLED AVOCADOS
- PREHEAT GRILL.
- CUT AVOCADOS IN HALF AND TAKE OUT SEED.
- LIGHTLY COAT AVOCADOS IN OIL AND SEASON WITH SALT AND BLACK PEPPER.
- PLACE AVOCADOS CUT SIDE DOWN ON PREHEATED GRILL AND COOK FOR 2 MINUTES.
- RESERVE AT ROOM TEMPERATURE FOR ASSEMBLY.
PREPARATION:
- EQUALLY FILL EACH GRILLED AVOCADO WITH THE PERUVIAN TOFU MIXTURE.
- GARNISH WITH CILANTRO LEAVES.
- SERVE IMMEDIATELY.
